What's for supper ? ....................

Oh my! I joined in today for Foodie Friday and didn't realize it was for train wrecks.But most of my cooking is train wrecks LOL .

Well actually this is what we had for supper last night . I am going to show you how to cook collard greens.This is my favorite greens.I used to never cook them because I didn't know how to season them good.I met a fella at a local restaurant close by and he told me how he cooked his and I have been hooked ever since . Just roll them up to the end of the big stem . As you are rolling them most of the stem will pop away from the leaf. What doesn't pop away just cut it off with the knife.


Now while you have them rolled up just go ahead and cut them up.I cut across them length wise one time and then go back and chop them up smaller .I hope you understood that, I am not real good about splaining ! LOL .
Now cover with water.
For this pan full I used half of a 12 oz. package of bacon ; slice across it kind of in small sections like this .
Now add it to the greens.
Now all you do is cook, cook , cook them till they look like this.I let mine boil almost dry.About half way through cooking them I add the salt.I have no measurement for the salt I just do to my taste. These are drop dead good I'm tellin ya !
So we had collard greens, white beans with ham cooked in them,pickled beets and corn bread and iced tea ! One of my favorite meals. It's funny how your taste can change over the years. When I was young I wouldn't have touched it. I guess I still shouldn't touch it, cholesterol city ya know ! LOL .

Woo hoo! You are talking about some of our favorite food there! We (hubby and I) grew up eating just like that. When we were in Savannah we ate the collard greens both times we were at Paula Deen's restaurant. Now that leads me to say that I don't think I've ever actually cooked them myself. Thanks for showing me how easy it is.

When I was a child I lived and Maryland for a couple of years. My step father was from Georgia and taught my mother to cook collard greens. I never liked them (or black eyed peas or boiled peanuts!).

I am more of a spinach fan!

I am, however, glad you enjoyed your meal. ☺

Hi Theresa, your directions for cooking greens is terrific. The bacon makes the dish and the cook is the secret. Good job. I would love to eat those greens. My mom made beets and greens to die for. A food memory that I adore.

I am so tired I am falling asleep. I am saying nighty night. Thank you for your sweet comment about my granddaughter.

Oh Theresa, you make my mouth water! I haven't cooked collards in soooooo long. That plate looks absolutely scrumptious! I think I might have to cook up some collards and pinto beans and cornbread and take a bate of 'em to Daddy. Do you know that term (bate)? It's what my Maw McDonald always called a big helping of greens and beans and cornbread! Lord, I'm hungry now!

We don't eat collared greens or whatever all those greens are called around here, but somehow I had decided I like them...and I've had some at a restaurant and indeed did like them.
Thank you for the proper way to make them taste yum at home...
Now I can try them this way..

Oh girl thanks so much for sharing the how to here...My late DH just loved his Greens and beans and lets don't forget the corn bread...Girl I could eat this plate right now YUM!! Hello, dear one...
Now, I have to be honest and say that I don't care for collard greens or turnip greens. Love spinach and almost any other greens. My mom used to cook collards just like you are showing here. I just never developed a taste for them, I guess. Now, I love the little Navy beans and red beans, a slice of onion, cornbread (NO sugar) and butter...good grief, it's only 7:30 in the morning here and I am wanting BEANS....:)
